THIERRY PILLOT 2023 SAINT AUBIN CASTETS

Thierry Pillot is the fourth generation of the Pillot legacy in the legendary Côtes de Beaune of southern Burgundy. Even though the domain began with Thierry’s great grandfather—Jean-Baptist —the domain was named after Paul Pillot—Thierry’s father.

Saint-Aubin remains one of Burgundy’s best-kept secrets, and Les Castets is a Premier Cru vineyard of real distinction. This Chardonnay emerges from limestone-rich soils, crafted with the precision and finesse that defines quality Burgundy. The wine balances ripe stone fruit with steely minerality and subtle oak influence, offering enough complexity to develop gracefully in bottle. Authentic Burgundian expression at a more accessible price point than celebrated neighbors.
