The Whisky

Lochlea Fallow Edition Third Crop marks the grand finale of the Ayrshire farm distillery’s seasonal Fallow trilogy. Inspired by autumn on the farm—a quiet period when fields rest and rejuvenate following the harvest—this release reflects the progressive depth of Lochlea’s estate spirit aged in sherry wood over consecutive years. For this third and final iteration, the distillery matured its 100% estate grown barley spirit exclusively in first-fill Spanish Oloroso sherry butts. Bottled at a approachable 46% ABV without chill-filtration or added caramel, Fallow Third Crop exhibits the deepest, richest profile in the seasonal collection, enveloping Lochlea’s signature crisp orchard fruit and cereal character in rich layers of baked apple, sweet Medjool dates, and warming wood spice.

Our Tasting Notes

On the eye, a polished copper-auburn with warm amber highlights and slow, clinging legs that coat the glass. The nose opens with an enticing autumn bouquet of warm baked green apples, sweet Medjool dates, and stewed sultanas, layered over toasted almonds and brown sugar syrup. As it rests in the glass, secondary notes of dark honey, dried fig, and fresh dunnage oak emerge. On the palate, the un-chillfiltered 46% ABV mouthfeel is remarkably velvety, soft, and coating. Upfront flavours of Manuka honey, nutty malt loaf, and freshly baked bread lead the entry, before transitioning into warm cinnamon bark, nutmeg, and sticky fruit preserves mid-palate. The finish is satisfyingly long, warm, and structured, leaving trailing memories of buttery sandalwood oils, mixed peppercorns, dried fruit skins, and toasted European oak.

The Production Team

The grain growing, spirit distillation, and cask selection for Fallow Third Crop were directed by the expert production team at Lochlea Farm. Managing 100% first-fill Oloroso butts requires careful tasting management to ensure the European oak staves impart rich dates, baked apple, and sandalwood notes while allowing the estate-grown barley profile to shine through.
